Fry up bacon, tomato and avocado.
Cut the rolls in half and toast.
Pop the bacon, tomato and avocado mix on the bread rolls.
Add chopped shallots, a touch of
dressing and COON Colby cheese.
This is more of a sandwich than a Toastie but it tastes great.
Use a non-stick fry pan with olive oil unless you want to create a washing up nightmare.
Remember to remove the rind or use rindless bacon.
